Pressure sensors - polyphonic aftertouch?

As near as I can tell, that entire product line is for measuring atmospheric or gas pressure.

If you want to put something under a key for aftertouch purposes, a force sensitive resistor is probably suitable. https://www.sparkfun.com/products/9673 (I think there's some company that will make those for you in custom sizes, and at more reasonable prices if you're buying in bulk.)

I once dated a girl name Polyphonic Aftertouch. 🙂
