Unfortunately, there are so many variables: what DAW you are using, does it support multi-core in a proper way, does the plugin you're using support it as well?
For example VSL pianos are not utilizing multi-core CPU properly, so if I want to reach really high polyphony, I have to load multiple instances of the plugin, one for each mic position, on separate tracks. I've done my tests and even 8 years old i7 with higher single core frequency speed beats my newer multicore i7 in scenario with single instance of plugin loaded.
Also, if you go for Intel, avoid CPUs with "U" in the name - they are lower voltage, good for longer battery life and power consumption, but limited clock speed really affects performance in DAW.
