To get a feel for the commitment involved, Most of the pianos that I've made instruments out of have taken between 4-8 hours, but that is literally from the time I pull up in the car to the time I leave the home. Easily the setup for me (12 microphones) takes 90 minutes, and that is streamlined for me because I set up the mics and levels at my home using my piano and bring the stands and mics over to the home about 80% pre-set up.
You've already set up your mics, so you already know that part. The performance takes about 1.5-3 hours if things are dead quiet, and depending on how many layers you would record. Since you now have experience recording your piano in your environment, you can already imagine what slight noises mean.
But that being said, I would love to try out your piano even with a simple three layer instrument, which, if no one cares about background noise and flubs and such, you can do probably in about 30 minutes, even as a prototype. You'd just have to record exactly what I tell you to perform, in exactly the order I say, so that my templates can more or less automatically make an instrument out of it.
And it's a thrill to hear other people play the virtual version of your piano.
